FSSAI has come up by adding standards for ‘milk protein concentrates’, ‘whey protein concentrates’ and ‘Cow or Buffalo Colostrum and Colostrum products’ relating to “Dairy Product and Analogues” Regulations and be called as Food Safety and Standards (Food Products Standards and Food Additives) Thirteenth Amendment Regulations, 2018. Sub regulation 2.1.21, 2.1.22 and 2.1.23 states the definitions and standards for milk protein, whey protein and cow and buffalo colostrum mentioned as below: –

  1. Milk Protein Concentrate– Milk Protein Concentrates are complex milk proteins that contain both casein and whey protein in their native form in the same and similar ratio as milk, depending upon their milk protein contents. These are generally manufactured by processes that remove most of the lactose and soluble minerals while retaining milk protein, followed by drying. Raw materials for milk protein concentrates are milk, skimmed milk, cream and water. Quality parameters are mentioned below in Table No. 1.

  1. Whey Protein Concentrate: – Whey protein concentrate is obtained by removing non-protein constituents from whey. It is done by means of physical separation techniques such as precipitation, filtration, dialysis, followed by drying. Raw materials used for manufacturing are whey, acid whey. Whey protein concentrates shall confirm to the quality parameters mentioned in Table No. 2 below: –

  1. Cow or Buffalo Colostrum and Colostrum products

 

  1. a) Colostrum– Colostrum is the lacteal secretion from the mammary glands of cow or buffalo or a combination obtained up to three to five days of parturition and preceding the production of milk. It contains fat, proteins, carbohydrates, vitamins, minerals and bioactive components (immunoglobulins and lactoferrin). Composition for colostrum is mentioned in table No. 3 below:

  1. b) Colostrum powder– It is a colostrum-based product obtained by the drying of colostrum by suitable methods while retaining the essential characteristics of colostrum. Composition for Colostrum powder is mentioned below in Table No. 4

Dairy food manufacturers should follow these standards with regulation relating to General Standard for Milk and Milk Products. This is with reference to the generic provisions pertaining to definitions of milk or milk products and heat treatments guidelines, dairy terms and addition of micronutrients
